Mother’s Day is coming up this weekend and if I’m being completely honest, I am SWAMPED. So many things to do and very little time to do them all. So when I thought of what I would make for Mother’s Day, both simplicity and time efficiency were key factors I needed to follow. I wanted to throw something together that would be super easy and fast, but still insanely delicious. That’s when I thought of making a berry crumble. It’s always a crowd pleaser, and most importantly wouldn’t take too much time to put together. Throw some vegan vanilla ice cream on top and you’ve got a delicious dessert that is a guaranteed hit!

To make this Vegan Berry Crumble recipe super easy and delicious, I used Bobo’s Maple Pecan Oat bars as the perfect, crunchy crumble topping. The bars are easy to break apart for your topping, require no extra thought or ingredients and brown perfectly in the oven. Personally, I love the Maple Pecan flavor to compliment the tart of the berries, but you could use any of their bars – they’re all incredibly delicious and would work well for this recipe. The Maple Pecan Oat Bars are the perfect topping, already containing pecans and that sweet maple taste most strive to achieve in a crumble recipe, but with no work involved. Keeping up with the easy and fast theme here, frozen berries should be used for this recipe. No need to go the fresh route and spend the extra $$$, the frozen berries actually provide the perfect texture and taste that we’re looking for.

6 Ingredient Vegan Berry Crumble
  1. 6 cups of frozen berries
  2. 1/3 cup of sugar
  3. 3 Bobo's Maple Pecan Oat Bars
  4. 1/4 cup of oat flour
  5. 1/3 cup of vegan butter
  6. zest from half a lemon
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine and mix together frozen berries with lemon zest, oat flour, and sugar.
  3. In a separate bowl, crumble up Bobo's Maple Pecan Oat Bars and set aside.
  4. Melt butter over the stove, or in a microwave, and mix in Bobo's Oat Bars.
  5. In a 1.8L casserole dish, pour in the berry mixture and evenly top with the oat bar mix.
  6. Bake for 30-45 min, until crumble on top is golden brown.
