Mexican Style Breakfast Tacos

Cinco De Mayo may just be one of my favourite days of the entire year. While it actually commemorates Mexico’s victory over the French in 1862, today’s Cinco is a huge celebration full of Mexican flair. Think of margaritas, Mexican food, dancing and games. And while those all seem great, let’s be real, it’s the food that gets me. I LOVE Mexican food. Then again, who doesn’t!? There’s a very good chance that at any given point in time, you could find me chowing down on tacos in my kitchen and I’m not ashamed to admit that.

The long weekend is FINALLY here and because of that, I’ve decided to share one of my favorite staple recipes for summer 2018. (Warning: the following photos may induce severe hunger) If you’re Canadian or American, or are planning to get together with friends or family this weekend (or any weekend!), I promise you that these burgers won’t disappoint and will quickly become a crowd pleaser. Easy to make, super delicious and a recipe that feeds 6, these burgers are a great way to kick off the warm weather and celebrate the 4th of July and Canada Day! Good food, good company, warm weather… what more could you ask for?!

When I think of summer-y desserts, carrot cake always comes to mind. There’s just something about it being fresh and light that makes me crave it when the temperatures warm up outside. I’ve been making it for years come summer time, usually growing the carrots myself, if I can. I know this may be confusing to some, as the cinnamon and nut meg spices might call for a more fall-y vibe, but the carrot just makes me crave it on a hot day. This year is no different and as I prepare to bake my first carrot cake of the season, I’ve decided to share the recipe with you.
